Fresh Fig and Mascarpone Tart

This tart had its beginnings in some left over puff pastry....that I wasn't sure what to do with.

From there, I started googling something that would work with the ingredients I had on hand. I imagine you could easily substitute cream cheese or creme fraiche for the mascarpone as well, equally so, with any fruit topping. The recipe I found that best suited my refrigerator that day is here.

Drizzle with honey and top with some fresh thyme at the end for a savory and sweet hint of flavor. The honey also gives it that fresh from the pastry shop look with a rustic glaze.

I love puff pastry. It allows you to make gorgeous goodies that look like they took hours to make, in only a matter of minutes.
