My healthy recipe series continues (as does my shape up for spring!).
This week's healthy recipe was inspired by Luna via their newest Luna bar flavor, peanut honey pretzel. The new bar is by far my favourite (aside from chocolate dipped coconut) and I have taken to ordering both of them by the box, because it is impossible to find in stocked in stores!
I always keep a Luna bar on hand in my purse for emergency snacks on the go. Life is busy and sometimes too busy for a proper meal. I'd rather know I was eating something healthful when hungry, rather than caving and downing a bag of chips because I was starving. Which I have been known to do from time to time.
Yes, dessert can be healthy too and you needn't go without when you are revamping your eating habits. As a general rule of thumb, everything in moderation, and when that fails eat a little more but edit the recipe to make it a bit healthier! These pots de creme were made lighter by using half and half in place of a heavy cream. Oh and did I mention the peanut butter? It lends sweetness and is totally satisfying.
I made a few modifications to the original recipe (here), by opting to just roast whole pepitas in a cinnamon maple glaze. Accomplished by mixing 1/4 cup maple syrup, 2 tablespoons orange juice, and sprinkle of cinnamon, pouring over pumpkin seeds, and baking at 400 degrees for 20 minutes). I also found I had to cook the pots a bit longer (about 10 minutes more), so remove only when just starting to set and firm up.
Et voila. A dessert that will satisfy your sweet tooth without waves of guilt!
