Savory & Simple: Roasted Vegetable Tart

What do do with leftover puff pastry dough?
An ambitious plan to cook a quick dessert for friends failed miserably for lack of time and puff pastry dough was already defrosted. It has to be put to use somehow, no way I would waste a perfectly good package of Darfour (ahem, especially at 10.00 a pop!).
A quick and delicous dinner option, yes somewhat decadent on puff pastry, but dinner all the same....was born.
I used up a package of pre-roasted vegetables, layered upon some herbed goat cheese, and topped with some additional goodies of my own (green onion, tomatoes, sprinkle of parmesan, whatever you have on hand), baked at 425 until golden and puffy, et voila. It was perfectly paired with some dressed greens and a glass of crisp rose. This would make for an effortless and utterly delicious starter for guests too!
