Lobster Rolls


Mr. MpChouChou and I have a Valentine's day tradition, which is pretty solid in my humble opinion. We let everyone else go out for their prix fixe menus, be rushed, probably experience an okay meal, and stay in. I can't wait to do just that, again this year- with the addition of our fireplace. It will be fabulous to celebrate in your home.
Our tradition also includes a lobster dish of some kind. Followed by some crazy chocolate dessert. Tradition is nice when it is this delicious.
This year's menu will include the lobster roll. Classic comfort food, no frills, all delicious flavor.
I made up this recipe off the cuff. I think the less that goes into the lobster roll, the better it usually tastes, so go light on the mayo until you get the correct consistancy. Tarragon also makes a nice addition but I think you get plenty from the chives and parsley. The lemon, not to be forgotten, that is what makes it sing and have a fresh spark.
Lobster Rolls:
1 lbs fresh shelled lobster meat
1/2 cup greek yogurt (full fat!)
1/2 cup mayonnaise
chopped celery
chopped chives
chopped parsley
3 teaspoons fresh lemon juice
salt & pepper to taste
Mix all ingredients in a large bowl. Place on toasted, buttered (of cousrse), rolls of your choice.
Dive in!
